      Anyway to display Product Category in a dropdown on vendor’s store page (like this https://burnley.lancs.life/)?

      Yeah sure, please go to wp-admin -> appearance -> widgets -> Vendor store sidebar -> Vendor Store: Category Widget -> Enable this option – https://ibb.co/gPPj4QV
